VeganMoFo 2010!

Tropical Quinoa Salad This afternoon I started testing for Robin Robertson’s upcoming cookbook, Quick Fix Vegan. While my 7 month old took a nap with my husband, I happily puttered around the kitchen, tossing ingredients into a single skillet. Less than 30 minutes later, dinner was prepared and looked like this:
